Sweet Cherry Coconut Loaf for breakfast? Yes please! You asked and I’m delivering. My super-nourishing Cherry Coconut Loaf recipe is up on the blog for you today. GF, DF, vegan and packed with the goodness of pepitas, apple and plump sweet cherries. This is a lovely one sliced up and toasted with coconut oil on top (yuuuum). I’m going to bake another one, slice it up and freeze slices for the afternoons where I need something sweet, healthy and filling. Enjoy!
GF/ DF/ VEGAN
(Makes 10 slices)
1 cup GF self-raising flour
1 cup almond milk
3 tsp coconut sugar
1 tsp pure vanilla extract
1 cup pepitas
1 large apple, grated
¼ cup coconut (desiccated)
½ cup cherries (frozen or fresh, chopped)
Oven to 180*.
Line a 13cm x 23cm loaf tin with baking paper.
In a bowl mix all ingredients together (apart from the cherries). Mix well.
Gently fold the cherries into the mix.
Pour batter into tin and bake for 40 mins until golden brown on top.
Allow to cool a little before slicing. Enjoy warm or cold.
Loaf slices are also delicious toasted with coconut oil on top.
